This mature site, on red loamy clay over limestone, historically supplied Leo Buring, maker of countless outstanding Rieslings in the past. The fruit is hand-picked and whole-bunch pressed. Crammed with mouth-filling texture, stone fruit and apple notes and waterfall-fresh acidity, this wine is not at all typically Clare in style. In fact, the stats here look very Germanic.

It’s a blinder and a remarkable release for the inaugural Adelina Riesling. A dry style, with a nut-oil piquancy that adds complexity to the sustained, juicy and lingering yellow grapefruit, nectarine fruit finish.

Shuck some oysters to match, serve alongside a crisp green salad, or drink beside some fresh salmon, tuna or sardines.
