Various members of the large Fevre family has been making Chablis in this famous appellation of northern Burgundy since about 1745.

For those who have not tried Chablis, Nathalie and Gilles ‘AC’ Chablis wine is a good entry point for those wishing to experience classic French Chardonnay. The Chablis wines are very typically un-oaked so what you taste then is pure Chardonnay from very special soils and climate. The wine comes from fruit grown in Kimmeridgien limestone which gives great minerality and acidity. The super cool, marginal climate means the wines just reach ripeness while retaining their vibrant and very characteristic acidity.

The wine smells and tastes of white flowers, nectarine and a wonderful sense of lemon rinds; it has a delicious mouth-watering, tangy character which sometimes is described as resembling oyster shell, or brine. This comes directly from the shell-like, limestone based soils.

This Chablis is crisp, dry and refreshing and is the perfect foil for pan-fried fish, creamy soups, or various chicken or pork dishes.
